'Linguine is not round like spaghetti or flat like fettucine. It’s more of an oval shape, with thin edges and a rounded centre. The difference is subtle, but it’s there.
We use Organic Durum Semolina (Titricum Durum) for this linguine.
Durum is a hard wheat which derives its gastronomically famous ‘al dente’ qualities from its high protein and gluten content. Grown around the world, the tricky semolina milling process makes it one of the only ingredients we have to import directly - ours comes from the Organic Molino Rosso Mill in Emilia.'
