Puns aside, brawn is no-brainer for the whole animal butcher and the eater intent on respecting the life given up by eating the whole animal and not wasting a skerrick. It's also one of the most delicious things you can eat, particularly when it's made from the heads of healthy, chemical-free pigs, pasture-raised on regeneratively-managed NSW farms.

The head is brined for a few days then boiled with aromatics and spices and the meat and vegetables are set in the delicious, gelatinous stock.
