This is a mild to medium, almost sweet chilli oil with a slightly nutty flavour that comes from frying the garlic and chillies in the oil. Make sure you shake it up when you use it so you mix all the lovely chilli and garlic in with the oil. Store in a cool, dark place and seal after opening.

Made with Karrabool Extra Virgin Olive Oil infused with fresh, certified organic Cayenne chillis from Block 11 and certified organic purple Italian garlic from Barrington River Organics.

Karrabool olive oil is made with a blend of Tuscan and Greek varieties - Correggiola, Leccino, Frantoio and Koroneiki - grown just outside Mudgee, NSW.

Block 11 Organic chillies are grown at Richmond, NSW.

Barrington River Organic Farm is in the foothills of the Barrington Ranges, NSW.

SERVING SUGGESTION

Sean Moran's delicious linguine with shredded rocket, lemon, chilli oil and garlic. Mix lemon juice, chilli oil, finely-diced fresh garlic, a little salt, grated parmesan and fresh rocket and toss with linguine or spaghetti. We sometimes add a few of Sift Produce's sweet tomatoes or lightly fried zucchini slices.

It's also delicious drizzled over pork or chicken. Well, any meats, really.
