This is a sort of semi-fancy number that is super easy and takes less than half an hour to prepare so it's a great mid-week dinner or lunch option.
A lovely, plump chicken breast draped with sage leaves and wrapped with a couple of slices of pastured pancetta. It's a cracker combination that elevates the humble breast way above its station.
Pan fry the chicken saltimbocca, then use the pan juices to make a sauce with generous sloshes of chicken broth and white wine, eschallots (or onion or spring onion), butter, parsley and lemon juice. Delicious.
