About our beef

We source whole, pasture-fed and finished beef bodies directly from holistically-managed farmers that are building balanced, thriving, resilient and biodiverse ecosystems. They're managing grazing animals in ways that contribute to, rather than deplete, ecosystem fertility.

Each farm is different but the governing principles are the same: move small mobs of cattle frequently to promote pasture growth, fertilise the soil and allow the land plenty of time to rejuvenate. Farmers are acutely sensitive to the changing seasons and requirements of the landscape and, if the season is hard, farmers will de-stock cattle rather than over-burden the system and risk further stress.

We source a variety of breeds including Galloways, Belted Galloways, Scottish Angus, Specklepark, Lowline Angus, Hereford cross, Wagyu and English Longhorn. Farmers choose breeds that will thrive in specific locations but each breed will express genetic characteristics differently according to the place and season.

In this way, every carcass we receive is a unique expression of time, place, management and genetics.

Key facts about our beef

We buy directly from the farmer.
Cattle are minimum 24 months old - no yearling beef.
All cattle are pasture-fed and finished - no grain unless animal welfare is at stake (e.g. in extreme drought).
Cattle are rotationally (cell) grazed and moved frequently.
Calm cattle are healthy cattle so every effort is made to ensure low stress handling.
No chemical pesticides, herbicides or fertilisers (super phosphates) used on pastures.
No concentrated feeding operations (feed lots).
No growth hormones administered.
All carcasses delivered whole and/or on the bone - no plastic-wrapped, boxed meat.
We seek out heritage breeds or traditional strains of more common breeds such as Angus.
We dry age all beef for a minimum of two weeks and up to seven or eight weeks.
