We make a big batch of this chilli oil every year when the season is coming to an end and it's a mild to medium chilli oil with a slightly nutty flavour that comes from simmering the garlic and chillies in the olive oil. Make sure you shake it up when you use it so you mix all the lovely chilli and garlic in with the oil. Store in a cool, dark place and seal after opening.

Made with Marri Hanna Extra Virgin Olive Oil infused with fresh Red Poblano and Bomba chillies from Glenora Heritage Produce and garlic from Birriwa Homestead.

Marri Hanna olive oil is made with a blend of Tuscan varieties - Correggiola, Leccino and Frantoio - grown just outside Mudgee, NSW.

Glenora Heritage Produce chillies are grown just over the Victorian border at Goornong. 

Birriwa Homestead is just north of Gulgong, NSW.

SERVING SUGGESTION

Sean Moran's delicious linguine with shredded rocket, lemon, chilli oil and garlic. Mix lemon juice, chilli oil, finely-diced fresh garlic, a little salt, grated parmesan and fresh rocket and toss with linguine or spaghetti. We sometimes add a few of Sift Produce's sweet tomatoes or lightly fried zucchini slices.
