This is the brine we use for our sous vide turkey breasts and for our whole turkeys - and it's also perfect for brining a chook.
Your 1.0 litre jar is concentrated so it will yield four litres of brine, enough to submerge your turkey. Start your brining process two days before you plan to cook your turkey or chook. See instructions (cooking tips) below!
Made with salt and Burraduc buffalo milk whey left over from Burraduc cheese production, Love My Whey Bird Brine is a lovely twist on a traditional brine and a great opportunity to use another product from the wonderful Burraduc Buffalo farm and dairy . It's hard to imagine more virtuous or cleaner whey.

To brine or not to brine?
Our slow-growing, heritage turkeys can be successfully cooked without brining, so brining really is optional, but it does lock in moisture and certainly will help to prevent the dreaded dry breast phenomenon. Also, our Love My Whey Bird Brine is very good!
The salt in the brine enters the cells via diffusion, the muscle fibres contract, retaining and drawing in moisture, increasing the weight of the bird by up to 10%. So, when the bird cooks and releases moisture, the end result will still be juicy.
If you do brine your bird, rinse and dry thoroughly before cooking.
