A simple, rich rillette topped with a delicate parsley jelly. Most rillette is sealed with fat, but we figured there was enough fat in the rillette and the jelly is a lovely counter to the richness of the rillette.
Made with the pork we receive as whole bodies from NSW regeneratively-managed farms. Only about 3% of Australian pigs are genuinely pasture-raised so you won't find rillette like this kicking around at Aldi.
Serve it as an entree with fresh, crusty bread or crackers, or add it to a Ploughman's Plate or a cheese platter. Also perfect picnic food. Goes beautifully with our Pickled Padron & Pablone Chillies.
Ingredients: pasture-raised NSW pork, biodynamic veal bones, pasture-raised pork bones, bay leaves, fresh thyme, fennel seeds, parsley, black pepper.
