Think about it this way. Around 3% of Australian pigs are raised outside on pasture, healthy and free to do their piggy thing. Everyone loves mortadella. It's a sandwich superstar that just goes with everything and it's an excellent school lunch box filler.
Grill it with cheese and layer on a bun with mayo and mustard, or try it with ricotta and pesto on a crunchy roll or just have it plain on sourdough with lots of crunchy lettuce or rocket and mustard.
